
Urine Markers Could Reveal How Much Junk Food You're Really Eating

Think you’ve got your diet under control? Your urine might say otherwise.
According to a new study reported by the Associated Press, researchers have identified specific molecules in blood and urine that can serve as biological markers of how much energy a person consumes from ultraprocessed foods (UPFs). And with nearly 60% of the American diet made up of these industrial-grade snacks and meals, the findings could reshape how we study nutrition and health outcomes.
Led by Erikka Loftfield at the National Cancer Institute, the study analyzed samples from over 700 older adults and paired those with dietary recall data. The team developed a score of 28 blood markers and up to 33 urine markers that reliably predicted an individual’s intake of ultraprocessed foods — not just a few chips here and there, but an overall dietary pattern.
The results? Your body may be giving off a biochemical signal when you’ve been hitting the frozen pizza and soda a bit too hard. These signals could soon be used to study links between UPF consumption and chronic diseases like type 2 diabetes, cancer, and more — all without relying on notoriously flawed food recall surveys.
To validate their findings, researchers turned to a 2019 National Institutes of Health study in which 20 adults were put on tightly controlled ultraprocessed and unprocessed diets. The urine and blood markers lined up with what each participant was actually eating, confirming the reliability of the metabolic signature.
Dr. Dariush Mozaffarian of Tufts University called it “a major scientific advance,” praising the potential of these biomarkers to unlock more insights into how food processing impacts our health. “With more research,” he said, “these metabolic signatures can begin to untangle the biologic pathways and harms of UPF.”
In short, this study may pave the way for more objective, science-backed nutrition guidance — and fewer vague food pyramids. And yes, your next urine sample might know more about your snack drawer than you’d like to admit.
